Homemade Pizza Sauce

Homemade Pizza Sauce When i first tried pizza at home i usually mix whatever sauce i have at home like(tomato ketchup+chili sauce +chopped garlic+chili powder+olive oil) they came very well and it was a tawa pizza with ready made pizza bread available at stores.

 I am the only one to like pizza, burger & sandwich at home previously ,but now my 2.5 yrs old LO Started liking it ,so i got a company to enjoy now.Making pizza sauce is very easy ,you just need some tomatoes and herbs that's it. Do try and share your comments as well as recipe pics... 


Homemade Pizza Sauce

Recipe Cuisine: Italian | Recipe Category: Snacks
Preparation Time:30 mins | Serves: 6- 7 Pizza

Ingredients


Tomato -8

Garlic- 3- 4 cloves

Mixed Herbs | Basil | Oregano-1/2 tsp

Red chili powder- 1/2 tsp

Pepper - 1/2 tsp

Salt as per taste

Ketchup or Sugar - 1 tbsp

Olive Oil - 3- 4 tbsp

Method:

  1. Cut a + mark at the bottom of the tomato.
  2. Boil water in a pan and blanch the tomato's for 2- 3 mins or till the skin started peeling off .
  3. 2 add
  4. Remove the skin and puree it using a blender .
  5. Now strain the puree to remove all the seeds and keep aside .
  6. 2 add
  7. In a hot pan add in the oil and add chopped garlic and fry till golden .
  8. 2 add
  9. Now add in the tomato puree followed by basil,pepper,salt,redchilli and ketchup or sugar.
  10. 2 add
  11. Mix well and allow it to cook till all the moisture evaporates and or untill you get a sauce lik consistency.
  12. 2 add
  13. Switch off the flame and allow it to cool.
  14. Store it in a clean glass jar for 10-12 days in refrigerator and freeze it for 3 months.
  15. This quantity makes 6- 7 pizza's.

Notes:

  • Use any store bough tomato paste| pulp | Puree too instead of fresh one.
  • Can use any spices like basil,oregano,mixed herbs,pepper,any Indian spices too for a twist.The Actual recipe dint have red chili but i added it to make little spicy.

Ragi Murukku Recipe | Kelvaragu Murukku | Finger Millet Murukku

Ragi Murukku. Ragi also called as Kelveragu | Kepai | Finger millet | Ragulu |Mandua is a gluten free crop and unique from others.As Ragi is rich in calcium ,so its perfect healthy snack.

Ragi Murukku

Recipe Cuisine: Indian | Recipe Category: Snacks
Preparation Time:30 mins | Serves: 3- 4 person

Ingredients


Ragi flour-1 Cup

Rice flour-1/2 Cup

G & G paste - 1/2 tsp(op)

Red chilli powder- 1/2 tsp(op)

Cumin | Sesame seeds |Ajwain-1/2-1 tsp

Turmeric powder- 1/4 tsp

Salt

Butter | Ghee | Dalda | Vanaspathi- 2 tbsp

Hot oil-1 tbsp

Oil for deep frying

Method:

    2 add
  1. In a bowl mix all the ingredients except hot oil and mix well.
  2. 2 add
  3. In a heavy bottom pan heat the oil for deep fry.
  4. 2 add
  5. Now slowly add water and make a soft dough.
  6. 2 add
  7. Add 1 tbsp of hot oil to dough and knead well.Adjust the salt if neccesary.
  8. Now add a pinch of dough to check whether the oil is hot enough or not.Always the batter should rise to top as soon as u put in oil.
  9. 2 add
  10. Use any murukku press hold,i used star and prees the murukku in ladle oe press directly to the oil.
  11. Flip and cook on both the side til the sizzle sound stops.
  12. 2 add
  13. Drain it in a paper towel.

Notes:

  • I used store bought idiyappam rice flour and ragi flour.Use home made rice flour for more crispiness.Click here for how to make home made Rice flour
  • Feel free to replace spices as of your choice like sesame seeds(ellu),ajwain {omam},cumin(zeera),chillipowder,garam masala ,crushed garlic,g&g paste depends on your creativity
  • Always do test on the oil before frying.
  • If your murukku batter breaks while pressing then ,it mean you need to add few tsp of water to make it smooth.Usually ragi flour tends to break easily fr most recipe,so its difficult for few to get shapes.If you want to get perfect shape use warm water instead of cool water.
  • If your murukku absorb lot of oil then it means more water in the dough,adjust by adding some rice flour

Pandan & Coconut Jelly

Pandan & Coconut Jelly Perfect dessert for kids for this summer.Now it march oly but summer started to get worse.Here in Singapore sunny & rainy is usual but this year it worse than previous,i heard in malaysia they declared school holidays bcoz of too much hot.I dint have to say about India...Plz doo some precautions before summer get worse friends,especially for kids..... 

 These are the tips to find how hot the climate is and cure to get rid of hot(got this from my friend in watsapp)
-keep a candle outside the house to check the temp \
-keep a bowl of water inside the house to keep the humidity inside house.
-eat lot of fruits, drink plenty of water,eat more of cooling foods. 
-Its not too late to do it ... plant more tress to save our future...

Agar agar is derived from seaweed mostly used as a thickening agent in ice creams or as a vegan replacement for gelatin...



Pandan & Coconut Jelly

Recipe Cuisine: Thai | Recipe Category: Dessert
Preparation Time:30 mins | Serves: 5-6

Ingredients for Pandan layering


Pandan Leaves-4 to 5 leaves

Water- 2 cup(1 for pandan leaves juice + 1 for mixing agar agar)

agar agar - 1tsp

Sugar- 1/2 cup

Ingredients for Coconut milk layering


Coconut cream or thick coconut milk- 1cup

Water- 1 cup

Sugar- 1/2 cup

Agar agar- 1 tsp

pinch of salt

Method for Pandan layer:

  1. Wash the pandan leaves well and cut them into small pieces and blend them well along with 1 cup water.
  2. 2 add
  3. Extract the juice use a cloth or fine strainer.
  4. In a pan add 1 cup water and allow it to boil,when it starts boiling add in the agar agar powder and mix well till it dissolves.
  5. Now add in the sugar and mix well till it dissolves.
  6. 2 add
  7. Now add the pandan juice & mix well till it combines and remove from heat..
  8. When it is hot pour it into a half mold and keep it in the refrigerator til it set(pics given below).

Method for Coconut layer:

    2 add
  1. In a pan add 1 cup water and allow it to boil,when it starts boiling add in the agar agar powder and mix well till it dissolves.
  2. Now add in the sugar,salt and mix well till it dissolves.
  3. Now add the Coconut cream & mix well till it combines and remove from heat..
  4. 2 add
  5. When it is hot pour it into remaining half set mold and keep it in the refrigerator til it set.
  6. 2 add

Notes:

  • You can use any juice ,milk shakes ,cream,fresh fruit pieces into it to prepare this jelly.My personal likes are mango ,strawberry which goes well with coconut jelly.
  • U can also use gelatin to make this ,but its not good for the health so used agar agar.
  • To be frank i dint like the pandan flavor ,but did this for my kid as we use fresh pandan leaves .
